Butter Aciote Chicken ( w/ avocado salsa )
Butter achiote chicken hits like a sunburnt Yucatán afternoon—deep red from annatto, bright with citrus, and dripping in butter as it roasts to a crackling edge. The marinade does the heavy lifting: earthy achiote paste, sour orange or lime, garlic, oregano, and a low hum of spice that seeps all the way in. What comes out is juicy, smoky, and just a little indulgent. Slightly crispy outside, tender inside, torn wildly into fresh tortillas and chased with something cold.
